DELICIOUS MELTED CHEESE AND BACON PANCAKES

We just can’t get enough pancakes! Try these ‘Melted Cheese and Bacon Pancakes’ this weekend.


Ingredients

  • 250g plain flour
  • 2 eggs
  • 100 ml milk
  • 100 ml sparkling water
  • 2 tbsp butter
  • Vegetable oil
  • 1 tbsp baking soda

Filling

  • 150-200g of Smoked Bacon
  • 150 -200g of Yellow Cheese, grated
  • 150 ml sour cream
  • Oregano
  • 2 tbsp pesto

Preparation

  1. Put the flour into a bowl, also the baking soda. Add in the eggs. Combine the flour and eggs with a fork until a thick paste forms. Gradually whisk in the milk and the sparkling water bit-by-bit, in a circular motion around the edge of the bowl until a smooth batter forms. Leave the batter to rest for about half an hour if possible, and then stir in the melted butter.
  2. Heat non-stick frying pan on a medium heat. Lightly oil the pan. Drop in two large tablespoon of the batter into the frying pan. Quickly but gently tilt so that the batter runs to all corners of the pan. Cook for 1 – 2 minutes on one side before turning over. Flip over gently and cook until golden on the other side.
  3. Apply each pancake with 1 big spoon of sour cream, put over little pesto and at the end put on the smoked bacon. Roll each pancake. Sprinkle the pancakes with yellow cheese and a pinch of oregano.
  4. Put the pancakes in a microwave on 350 degrees for about 1 minute and they are ready to be served.
  5. The yellow cheese is melted all above the pancakes and it is highly recommended to be eaten immediately.
